Description

This is the perfect dessert for summer and it comes together so easily. It's light and airy, loaded with fresh strawberries, and it has gooey pockets of cream cheese just to shake things up. That may be where this cake gets its name.

    Preheat oven to 350ยบ and grease and lightly flour a 9x13" baking dish.

    In large bowl, mix together cake mix, water, vegetable oil and eggs until smooth. Gently fold in 1 cup of chopped strawberries, reserving some for the top. Pour batter into prepared baking dish and set aside.

    In separate bowl, add softened cream cheese, vanilla extract, and powdered sugar and use electric hand mixer to combine until smooth. Then drop spoonfuls of this cream cheese mixture onto the top of the cake batter that's in the baking dish. There should be big clumps across the top. Then take a knife and lightly swirl those clumps of cream cheese to spread it just a little. Place in the oven to bake for 35 to 45 minutes, until cake is golden brown on top. (If you do a toothpick test, remember that the pockets of cream cheese may give you an inaccurate ready, because they will be a bit gooey, so try to poke where there is only cake.) Remove from oven and let cool completely.

    Once cake is cooled, you can cut into it and serve it with a dollop of whipped cream and a fresh strawberry on top. Or you can use the whipped cream to fully cover the top of the cake like frosting, and then top with more fresh chopped strawberries or the can of strawberry pie filling. Store in refrigerator until ready to eat.
