Description

Chicken Mesilla gets its name from the Double Eagle restaurant in Old Mesilla, New Mexico. (It's on the National Register of Historic Places.) This chicken is tender, cooked over caramelized onions and then topped with Hatch green chile and melted cheese. It's a "winner, winner, chicken dinner!"

  1. To make Chicken Mesilla

    Heat a large sauté pan with the butter in it, and add the sliced onion. Quickly mix to coat the onion in melted butter, but then do not stir so the the onions can turn golden brown. Then stir just to turn. When onioins are almost fully caramelized, stir in minced garlic. Remove from heat. Spoon the caramelized onions into 4 equal mounmds in a shallow baking dish. Season chicken with salt, pepper, and any other seasonings you like on both sides. Then use the same sauté pan, with a little olive oil in it, to cook the chicken over medium high heat. Cook 5-6 minutes on each side, or until the chicken is cooked through. Arrange the chicken breasts over each mound of caramelized onion. Top each with 1 green chile and 1/3 cup of cheese. Bake at 325º for 6-8 minutes or until the cheese melts. Serve and enjoy!
