Description

If you need a tasty side dish to take to a potluck or family gathering, look no further than this Cheddar Potato Casserole. It's creamy and delicious with bits of bacon, melted cheese, and Hatch green chile. It's a real crowd pleaser and easy to make, too.

  1. To make this Cheddar Potato Casserole

    Peel, cut up, and boil potatoes in water until softened. Drain. Mash pulp with butter; stir in sour cream, milk, salt and pepper. Reserve 1/4 cup crumbled bacon for topping. Gently fold remaining bacon, 1 cup of cheese and 2/3 of the chopped green chile into potato mixture. Transfer to a greased baking dish. Top with the remaining cheese, green chile, and bacon. Bake at 350 until heated through and cheese is melted, 15-20 minutes.
