Description

I'm calling it Rocky Roadrunner Ice Cream, only because of our pet roadrunner, but this is your classic Rocky Road Ice Cream that's creamy and chocolatey, with chewy bits of marshmallow and crunchy nuts. It's easy to make, requiring no fancy equipment, and it's a delicious treat perfect for those hot summer days.

  1. To make this no churn Rocky Road Ice Cream

    In large bowl, whip heavy cream with an electric hand mixer until stiff peaks form. In separate smaller bowl, combine sweetened condensed milk, cocoa powder, vanilla extract, and salt. (You can use the same hand mixer and don't need to wash the beaters.) Once you're left with a smooth chocolate sauce, pour it into the larger bowl with the whipped cream. Add in marshmallows, chocolate chips, and nuts and use a rubber spatula to fold in. Pour into a freezer safe container with a lid, (or cover with plastic wrap) and freeze a minimum of 6 hours, although it's best after 12 hours. Enjoy!
