Ground Beef & Potato Casserole
Description
Ground beef & potatoes are two of the most common ingredients, but in this dish, they're uncommonly delicious, covered in a cream sauce and topped with melted cheese.

To make this ground beef & potato casserole
Place cubed potatoes in large stockpot and put enough water in it to cover the potatoes. Add salt to water (I used approx. 1/2 tsp) and let come to boil. Once boiling, let potatoes continue to cook approximately 10 minutes, or until a fork can easily pierce the potatoes. Drain water and set potatoes aside.
Heat olive oil in large pan and sauté chopped onion in it for a couple of minutes. Add in minced garlic and sauté one minute more. Add in ground beef and break it up as it browns. Once meat is cooked, add diced tomatoes, green chile, salt, pepper, and cumin and mix to fully combine.
Preheat oven to 350º
Add cooked potatoes and chopped parsley to ground beef mixture on stovetop and let it cook a few minutes, allowing potatoes to slightly crisp on exterior. Then remove from burner. In separate pan, heat heavy cream and parmesan and stir until cheese melts into sauce.
Place ground beef and potato mixture into a 9x14" casserole dish. Pour cream sauce evenly over the top. Top with mozzarella cheese slices. Bake for 20 minutes until cheese is fully melted. Serve hot and enjoy!
