Description

Sopes are thick corn masa tortillas shaped into little bowls that can be filled with shredded meats, beans, cheese, lettuce, tomato, and salsas of your choice. They are positively delicious and worth the effort!

Instructions

  1. To make the sopes

    In large bowl, mix together masa harina, salt, olive oil to combine. Then add hot water a little at a time and knead for a few minutes until it forms into a smooth dough. Pinch off a small portion of the dough and form into a ball, then press down on it. If dough cracks along the sides, add a little more water. If not, cover with a damp kitchen towel and let rest approximately 15 minutes. Heat a comal or large skillet on stovetop over medium high heat. (I like to add a tiny bit of grease to prevent sticking.) This amount of dough should make 10 to 12 individual sopes, so divide dough accordingly and form masa balls. Place masa ball between two sheets of plastic to prevent sticking. Press down with a tortilla press, or use a plate if you don't have a tortilla press, until tortilla is between 1/2" to 1/4" thick. Then transfer to comal/skillet and let cook at least one minute on each side. When sopes are cooked, place them on a flat surface and, while they're still hot, carefully use index fingers and thumbs to pinch along the sides to create a rim along the edge. Repeat the process until all the sopes are cooked and shaped. At this point, you can set them aside and even refrigerate them until you're ready to eat. When it's time to prepare your sopes, heat a large skillet with about 1/2" deep of cooking oil. Fry individual sopes on both sides, then fill with ingredients of your choice: beans and cheese, shredded beef or chicken, ground beef, etc. Top with lettuce, tomato, salsa of your choice, sour cream and queso fresco, and enjoy while hot.  

  1. To make the shredded beef

    Season pieces of beef with plenty of salt, pepper, and red chile powder. Using sear function in Instant Pot, sear on all sides. Then add in onion, garlic, water, and bay leaf, and set to pressure cook for 50 minutes. Let pressure release naturally. Remove cooked meat from pot and shred with fork. Place in a bowl and pour reserved broth over it. 

  1. For creamy avocado salsa

    Place all ingredients in a food processor or blender and purée until smooth. You may need to add additional water to help it blend. Transfer to bowl. cover and refrigerate until ready to use.
