Red Chile Sauce

Description
This basic red chile sauce is anything but basic. Made with Chimayó, New Mexico chile powder, it's got a depth of flavor unlike any other. No wonder this specific variety of chile is so sought after and expensive. This recipe is also pretty special. It comes from El Potrero Trading Post in Chimayó.

To make this red chile sauce
Add chile powder to liquid you are using, stir and let soak 20 minutes. Heat skillet on stovetop over medium high heat with cooking oil. Sauté minced garlic, then add the flour and let brown while stirring continuously. Once flour is browned, add in chile liquid, cumin, oregano, salt, and splash of red wine vinegar. Stir until left with smooth sauce. Simmer a few minutes. If desired, add cooked potatoes and mash into sauce for desired thickness. If too thick, you can also add water. Let simmer a few minutes and enjoy.
