To Make these Pork and Sweet Potato Rice Bowls

  1. Start by cooking the pork

    Rinse pork shoulder roast and pat dry. Season liberally on all sides with salt, pepper and any other spices of your choice.  Sear meat on all sides in a little olive oil. Add sliced onions, a couple of fresh garlic cloves, and about 1/4 of a cup of water. Then cook for 30 minutes in instant pot or in Ninja Foodi using the pressure cooker function. After the 30 minutes, let the pressure release naturally. Then remove pork from cooker and shred on a cutting board with a fork.

  1. For the roasted Sweet Potatoes

    Peel and dice sweet potatoes into equal bite-sized portions. Coat them with olive oil and then season with salt, pepper, garlic powder, New Mexico red chile powder, and all purpose flour. Once all the pieces of sweet potato are coated in seasonings, place them in a baking pan and bake at 450º for about 30 minutes, flipping them over at the halfway point.

  1. To make the rice

    Cook rice on stovetop or in rice cooker. It's a 2-to-1 ratio. 2 cups of liquid for every 1 cup of rice. You can use water or chicken broth. In this case, I didn't have chicken broth, so I just used water, but I added some chipotle sea salt seasoning and garlic salt. If cooking on stovetop, let come to boil, reduce heat to low, cover with a lid and cook until all the liquid is absorbed by the rice. Do not stir during cooking. Remove from heat and let set 10 minutes before fluffing with fork and serving.

  1. To make the dressing

    Combine Mexican crema or sour cream with chile powder and any other seasoning you choose. Add fresh squeezed lime juice and mix until smooth. For runnier consistency, add more lime juice.

  1. To assemble these rice bowls

    Make sure can of beans is heated and all other ingredients are prepped. You can do this in the order you choose. I started with a bed of lettuce that I covered with a healthy serving of rice, a serving of black beans, and plenty of baked sweet potatoes. I then added halved grape tomatoes, red onion and sprinkled with queso fresco. If you have avocado, add that, too. I topped everything with shredded pork meat. To finish, I drizzled the delicous homemade dressing. It's a fantastic meal that is delicious, will fill you up, and you can feel good about it because it's nutritious.
