Homemade Caramel Apples

Line sheet with parchment paper and set aside. Wash apples in hot water to remove waxy coating. Dry completely, remove stem, and place wooden skewer into apples. Set apples onto sheet lined with parchment paper and place in refrigerator or freezer while you make the caramel. (Having cold apples will help the caramel stick better.)
Heat saucepan over medium high heat and melt butter in it. Add brown sugar, corn syrup and condensed milk, stirring until everything is broken down and well mixed. Attach candy thermometer to saucepan, making sure tip reached the caramel but not the bottom of the pan to get an accurate reading. Let cook stirring continually until temperature reaches 240ยบ. This should take approximately 15 minutes. Remove from heat and quickly add in vanilla extract and stir until well incorporated.
Take apples out of refrigerator, quickly dry off any condensation that may have formed and begin dipping apples into hot caramel to get them completely coated. Remove excess caramel from bottom of the apple before placing onto parchment lined sheet. If decorating with toppings, do so while caramel is still hot. The caramel will become thicker and more difficult to work with as it cools, so if necessary, reheat in microwave in 15 second increments and stir well. Place finished caramel apples in refrigerator for 15 minutes to allow them to fully set. Then enjoy!
