Melt butter in large skillet over medium high heat, add in chopped apples, and let cook approx. 8 minutes. (Par-cooking the apples ensures they will be softer, but this step is optional.) Let them cool and remove any liquid. In large mixing bowl, mix together all dry ingredients. Add in wet ingredients and mix to combine. Once you have a consistent sticky batter, add in the apples and combine.
Heat oil in deep pot to 350º-375º (If you don't have a thermometer, take a little piece of batter and drop it in the oil. If it floats to the top, your oil is hot enough.)
Drop dough into hot oil by large spoonfuls. Let it fry approx. 2 minutes on one side before flipping it over and letting it fry another 2 minutes on the other side. Dough should be a dark golden brown color. Place on paper towel-lined rack or plate to allow excess oil to drain.

Instructions for glaze
In small separate bowl, mix together powdered sugar, vanilla, and milk. (Add milk a little at a time because you may want need it all.) Mix until smooth. Dip fried apple fritters into glaze and let stand on rack until dry. Then enjoy!
