I love when you can make a complete dinner from a single dish, and that's what you get with this delicious Green Chile Tater Tot Casserole. It's got layers of ground beef, green chile, and vegetables in a creamy mushroom sauce. Then it's topped off with cheese and tater tots which will have you going for seconds!

  1. To make this Green Chile Tater Tot Casserole

    Heat oven to 400°F. Spray 13×9-inches baking dish with cooking spray.

    In 10-inch nonstick skillet, cook beef and onion over medium-high heat 8 to 9 minutes, stirring occasionally, until brown; drain. Reduce heat to medium; stir in chile, soup, water/milk and salt until well blended. Pour beef mixture in dish then add mixed vegetables on top of beef mixture. Top with 1 cup of the Cheddar cheese. Layer tater tots in a single rows on top. Bake 45 minutes or until tater tots are lightly browned. Top the tater tots with remaining 1 cup cheese and bake until cheese is melted and golden brown on the top.
