  1. To make Gorditas

    Cook & season ground beef to your liking (the way you would normally make your taco meat), cover and set aside.

    In a large mixing bowl, mix together masa harina, flour, baking powder and the salt. Then cut in shortening and work into flour mixture until well combined. Begin adding the water a little at a time and knead with clean hands. When you finish adding water, you should be left with a smooth, pliable masa/dough. If you're adding chile sauce to your masa, add it in at this point and knead until color of masa is consistent. Then, using hands, roll masa into small balls (roughly 2-3") and press down with a tortilla press or with fingertips to form individual flat, round discs a little larger than the palm of your hand. They should be between 1/4" and 1/8" thick.

    Heat cooking oil in pan, and when hot, fry gorditas until golden brown. Remove from pan and let excess oil drain onto paper towels. Slice gorditas down the middle to create a pocket. Fill with cooked ground beef, lettuce, tomato, cheese and your favorite salsa, and enjoy while hot.
