Fried Quesadillas
These easy cheesy Fried Quesadillas are a delicious anytime snack, or can be enjoyed as a meal. Made with homemade corn tortillas and then cooked until golden and crispy, they are best served with salsa, and as you'll see in the accompanying video, they're also wonderful with pickled onions.

To make these fried quesadillas
Mix together masa harina and hot water until fully combined and dough holds together and feels soft and pliable. You may need to add a little more water. Cover with a damp kitchen towel and let rest for 10-15 minutes to allow dough to fully hydrate. Then form 10 equally sized dough balls. Use a tortilla press lined with plastic on top and on bottom of individual dough balls and press to form tortilla. Remove top plastic and fill with shredded cheese (and beans/meat if you choose), Using plastic on bottom of tortilla as a guide, gently fold over tortilla and press edges down lightly to seal contents of quesadilla. Carefully remove plastic and transfer to pan filled with enough oil to fry. Fry until golden and crispy on both sides, flipping over once. Remove and allow excess oil to drain on paper towels. Enjoy with your favorite salsa and toppings.
