Fried Mashed Potato Sandwich
 
			Description
It's difficult to describe what this is, but it's absolutely delicious. Just picture a deep-fried mashed potato sandwich that's been stuffed with cheese and Hatch green chile. The exterior is crispy, and the inside is melty goodness.

															To make thisCook potatoes in water until you can easily pierce them with a fork. You can either boil them whole and peel after, or peel first, cut into large cubes and boil that way. Drain water and mash potatoes until smooth. Add melted butter, flour, salt and pepper and mix well. Cut a large piece of plastic wrap and spread a little olive oil on it to prevent sticking. Then take some of the potato mixture and form it into a flat, round circle, pressing down with your fingertips. Fill the center with plenty of grated cheese and green chile. Use the sides of the plastic wrap to fold over each side and help shape this stuffed potato into a rectangle with the cheese and chile in the center. Carefully fry in hot oil until golden on both sides. Place on paper towel to let excess oil drain and enjoy!
