Carrot Cookies

In large bowl, cream together sugar and shortening. Add in egg and continue mixing. In separate bowl, mix together dry ingredients (flour, baking powder, cinnamon, & salt). Add dry ingredients to wet ingredients and mix until consistent dough forms. Add in carrots and mix to combine. Drop cookie dough onto baking sheet by the teaspoonful and bake at 350ยบ for 12-15 minutes or until edges of cookie are golden brown. Let cookies cool completely before eating.
