  1. To make this Banana Nut Bread

    Preheat oven to 350º and lightly grease a 9x5" loaf pan

    In a large bowl, sift the flour, baking soda and salt. Set aside.

    In a small bowl, lightly mash 2 of the bananas with a fork, so they still have a bit of texture.  

    In a large bowl, with an electric hand mixer, whip the remaining 2 bananas with the sugar until you have a light and fluffy banana cream. Add the melted butter, eggs and vanilla. Beat well and scrape down the sides of the bowl. Mix in the dry ingredients until just incorporated. No need to over blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into prepared loaf pan. Tap on counter to get out any air bubbles. Bake for 1 hour to 1 hour and 15 minutes, or until golden brown and toothpick inserted in middle comes out clean. Remove from oven and let stand 10 minutes before turning out onto a cooling rack. Let cool completely before slicing and serving.
