Green Chile Cheeseburger Salad

In New Mexico, we LOVE Hatch green chile in our cheeseburgers, and this recipe is everything you love about that burger, only in a salad. So, it's healthy-ish. The homemade french fries are baked in a light avocado oil, and we're forgoing the hamburger bun, but not sacrificing any of the flavor. Even the dressing tastes just like your favorite burger sauce.

To make this Green Chile Cheeseburger Salad

Start by making the dressing
Place all ingredients in a small bowl and whisk together until left with a consistent sauce. Cover and refrigerate until ready to use.

To make the French Fries
Wash & dry potatoes thoroughly before cutting them lengthwise into fries. I like to leave the skin on, but you can peel them if you prefer. Place cut potatoes into large bowl and cover with cold water. Let them soak a minimum of 30 minutes. This will help reduce the starch and make for a crispier french fry.
Once potatoes have soaked, preheat oven to 475º
Remove potatoes from water and place on clean kitchen towel to dry. Line a large cookie sheet with parchment paper. Spray with avocado oil. Place fries in an even layer across the cookie sheet, trying not to overlap any of them. Spray fries with avocado oil. Sprinkle with salt, pepper, garlic salt, and chile powder. Then bake for 30 minutes. Serve and enjoy immediately.

To make the Green Chile Cheeseburger Salad
Heat a large skillet on the stovetop over medium high heat. Drizzle a couple of tsp. of oil in it. Then brown ground beef, breaking it up as it cooks, but being careful not to break it down completely. Add in green chile and salt and pepper to taste. Remove from burner once fully cooked.
Make salad using bed of lettuce, tomatoes, onion, shredded cheese, bacon bits etc. Top with cooked ground beef and homemade french fries. Drizzle dressing on top and enjoy!
