Christmas Cake
Description
This scrumptious cake is special enough for the holidays. It's filled with dates and chopped pecans and has a sweet citrus flavor from the orange glaze. It comes from the cookbook "Twelve Gifts: Recipes from a Southwest Kitchen" by Adela Amador.

To make this Christmas cake
Cream together sugar & butter. Beat eggs and add to butter and sugar. Beat together. Sift together flour, soda & salt. Add to creamed mixture, alternating with buttermilk. Add orange rind, dates & pecans. Mix and pour into greased and floured tube pan. Bake at 325º for 1 1/2 hour. While still hot, before removing from pan, punch many holes in cake all the way to bottom with ice pick. Then make orange glaze.

To make orange glaze
Dissolve sugar & orange juice in saucepan over heat. Do not boil. Add orange rind. Pour hot glaze over cake. Let glaze drip into holes in cake. Let cake stand in pan several hours. Remove when completely cool.
