Instructions

  1. To make this Mexican Pasta Casserole

    Cook pasta separately, just until al dente & drain.

    Preheat oven to 350º

    Heat a large pot on stovetop over medium high heat with enough olive oil to coat the bottom of the pan. Add in diced onion and ground beef. Break up meat and let it brown as onions sauté. Add in minced garlic, green chile, and can of diced tomatoes. Stir well and season with salt, pepper, and cumin. Add in can of cream of mushroom and sour cream. Mix and add in half of the shredded cheese, reserving the rest for later. Drain cooked pasta and add to pot with meat mixture. Mix well. Grease a 9x13" baking dish. Transfer everything in the pot to the baking dish and spread evenly. Top with remaining shredded cheese. Place in oven approximately 15 mins. or just long enough for cheese to melt. Take out of oven and enjoy!
