Green Chile Stew

Green Chile Stew, made with Hatch green chile, is the ultimate in comfort foods. It's delicious, nutritious, and just warms you up all over. Before you go trying to correct me on the spelling, New Mexico chile is always spelled with "e." If you're fortunate enough to have access to it, you know that it stands out for its depth of flavor, and this recipe is a fantastic use of it.

To make this Green Chile Stew
Cut all your vegetables in advance. Heat a large pot on the stovetop over medium high heat and add enough olive oil to coat the bottom of the pan. Brown meat on all sides. Add 1-2 Tbsp. of flour depending on desired thickness of broth. Add in onion and let fry for a bit. Then add in minced garlic, tomato, green chile and spices. Mix well. Add in potatoes and cover with enough broth or water to completely cover all the ingredients. Let come to boil. Reduce heat to Low and cover with a lid. Let cook for 45 minutes until meat is tender. Enjoy!
