Lemon Chicken Orzo Salad

This orzo salad is light and refreshing and perfect on a hot day. Packed with chicken, cucumbers, cherry tomatoes and feta cheese, it will fill you up without leaving you feeling heavy. And the dressing is irresistible with fresh lemon giving it a brightness that's perfect for summer. Enjoy as a light meal on its own or as a side.

  1. To make this orzo salad

    Cook orzo in pot of boiling water with salt according to package directions. Once al dente, drain and rinse with cold water to stop cooking process. Transfer orzo to large bowl. To it, add chopped cucumber, tomatoes, onion, arugula, chicken and feta cheese. 

    In separate, small bowl, combine zest and juice of a large lemon, along with olive oil, honey, minced garlic, and plenty of salt and pepper. (keep in mind the salad is big and will need lots of salt) Whisk until left with a smooth dressing.

    Pour dressing over salad and mix to get all ingredients coated. Enjoy!
