Orange Chicken with Fried Rice
If you've ever wanted to make Orange Chicken with Fried Rice at home, but have been intimidated to try it, THIS is the recipe for you. It comes courtesy of my friend, Raquel, who is a fantastic cook. I hope you check out the video that accompanies this recipe because she, literally, breaks it down step-by-step. And, I cannot say enough how delicious it was! She used dark soy, which is less salty than regular soy, but it gives the flavor a richness that's fantastic.

To make the orange chicken
Coat chicken pieces in corn starch and set aside. In separate bowl, mix flour, salt & pepper, minced garlic, water & egg to form a loose batter the consistency of pancake batter. (You may need to add a little more water, but do so a little at a time.) Dip chicken in batter and deep fry in vegetable oil until chicken is fully cooked. Remove and place on paper towels to allow excess oil to drain.
For orange sauce/glaze, place minced ginger root, garlic, orange zest, orange juice, sugar, corn starch, rice vinegar, and dark soy sauce in medium bowl and mix until well combined. Transfer mixture to large sauce pan and cook over medium high heat. Once sauce comes to a boil, continue to cook a few minutes more. Add breaded/deep-fried chicken into sauce and stir until completely coated. Remove from heat.

To make fried rice
Heat large skillet over stove at high heat, place sesame seed oil and pat of butter in skillet and allow to melt. Add cooked rice and stir. Create a well in center of pan, crack egg into well and immediately scramble until egg is fully cooked. Combine scrambled egg into rice mixture. Add mixed vegetables and green onion and continue to mix. Add a few dashes of dark soy sauce and some sesame seeds, and mix. Remove from heat.
