Elevated Grilled Cheese

Want to take your ordinary sandwich to the next level? Then you've got to try this Elevated Grilled Cheese Sandwich inspired by the "Grilled 3-Cheese" at Central Grill and Coffee House in Old Town Albuquerque. It's made with three different types of cheese (mozzarella, Swiss & American), it has some thinly sliced tomato, and a helping of fresh Hatch green chile...all in the middle of toasty whole grain bread. The combination is out of this world!

Instructions

  1. To make this elevated grilled sandwich

    Butter outside of two pieces of  sliced bread. Flip over and put plenty of shredded mozzarella cheese on one side. Place American cheese slices and Swiss cheese slices on other side. Top with thinly sliced tomatoes and place on hot grill with buttered sides down. Quickly grill Hatch green chile on side of grill and then place it over cheese on one half of sandwich. Take other side and flip over onto it. Cover with lid if necessary and grill until outside of sandwich is golden and toasted, and cheese inside is melted.
