Green Chile Sauce from Green Chile Powder
This is the perfect recipe for when you don't have fresh chile, but still have that craving. Use it for enchiladas, over burritos, or anywhere you like green chile.

Heat pan on stovetop over medium high heat, add in oil or butter followed by flour. Mix well and let cook two minutes. Add in chile powder, salt, garlic powder, ground cumin and oregano. Mix to combine, then add liquid. Stir to dissolve and break up spices. If you have a gravy whisk, this is the perfect time to use it to make sure sauce is smooth with no clumps. Let it come to a boil, reduce heat and let simmer for 15-20 minutes. Use sauce immediately over your favorite dish and enjoy.
