Cozy up to a savory bowl of this Sausage Tortellini Soup and immediately feel better.
Heat a large pot on stovetop over medium high heat and add enough oil to coat bottom of the pan. When hot, add in Italian sausage and break it up as it cooks. Add in chopped onion and let it cook a few minutes until translucent. Next, add in minced garlic, along with oregano, basil, salt & pepper. Mix well then add flour. Stir and let cook a couple of minute. Then pour in 4 cups of stock and can of tomato sauce. Mix again and let it come to a boil. Lower heat and let it simmer 5 to 10 minutes. Add in the tortellini (If using frozen, turn heat back up) and fresh baby spinach. Cook until tortellini is al dente and spinach is wilted. Finally, add in half & half, let cook a couple minutes more, then remove soup from burner and enjoy while hot.
