Delicious and ready in minutes with only a few ingredients.
Bring salted water to a boil in a large pot and cook pasta according to package directions. Reserve a cup to a cup and a half of the pasta water and set it aside. Drain remaining liquid from cooked pasta and set pasta aside. Return the same pot to the stovetop and over medium high heat melt the butter and sauté the minced garlic for one to two minutes. Add ricotta, parmesan cheese, lemon zest, lemon juice, salt and pepper and whisk or stir to combine. Add in reserved pasta water a little at a time, until you achieve your preferred sauce consistency. Return cooked pasta into pot and mix until pasta is fully coated in lemon garlic sauce. Add more pasta water if necessary. Remove from stovetop and enjoy while hot.
