This delicious macaroni salad is loaded with lots of wonderful flavors that go together so perfectly. It's hearty enough to eat on its own, or makes a great side dish for a potluck or backyard bbq.
Cook pasta according to package directions. Drain water and let cool.
Meantime, in small bowl mix together mayonnaise, Mexican crema or sour cream, yellow mustart, pickle juice, salt & pepper, onion powder and garlic powder. Whisk until smooth and set aside.
Once pasta is cooled, place in large bowl, and to it add the cubed ham, the corn, the shredded carrots, the chopped onion, the cubed cheese, and the chopped jalapeños. Drizzle sauce on top and mix to fully combine. Serve and enjoy or refrigerate until ready to eat.
