I love when you can make a complete dinner from a single dish, and that's what you get with this delicious Green Chile Tater Tot Casserole. It's got layers of ground beef, green chile, and vegetables in a creamy mushroom sauce. Then it's topped off with melted cheese and crispy tater tots. You will definitely be going for seconds!
Heat oven to 400°F. Spray 13×9-inches baking dish with cooking spray.
In 10-inch nonstick skillet, cook beef and onion over medium-high heat 8 to 9 minutes, stirring occasionally, until brown; drain. Reduce heat to medium; stir in chile, soup, water/milk and salt until well blended.
Pour beef mixture in dish then add mixed vegetables on top of beef mixture. Top with 1 cup of the Cheddar cheese. Layer tater tots in a single rows on top. Bake 45 minutes or until tater tots are lightly browned. Top the tater tots with remaining 1 cup cheese and bake until cheese is melted and golden brown on the top.
