Everyday Cupcakes are sweet and simple cupcakes from scratch that you don't have to frost. And they're made from ingredients you probably already have, so you don't need to make a special trip to the supermarket to satisfy that sweet tooth. They're perfect for people who don't like desserts that are too sweet. Of course, you can frost them if you'd like, and in this video, I even dress them up a little for the 4th of July. It's the same great taste with a tiny patriotic twist.
Place shortening in mixing bowl. Sift in dry ingredients. Add egg and half the milk and vanilla and mix at low speed until fully mixed. Place baking cups in baking pan and fill with batter just over half full. Bake at 350º for 18-20 minutes. Makes 1 dozen
For the Patriotic Cupcakes, you simply separate the batter in thirds. Leave one portion as-is, and add red food coloring to one batch, and blue to the other. Then layer blue batter on the bottom of your baking cups, followed by a layer of the plain white batter. Then add a layer of red batter on top. Make sure each color layer is spread all the way to the edges of the cup. Bake as directed, top with either white icing or a dollop of whipped cream, then add a patriotic flag. These simple cupcakes can add the perfect spark to your 4th of July feast. They're both festive and delicious, and make for a fun surprise when you open them up and find they are red, white and blue on the inside.
