Dulce de Membrillo
This candy, made from quince, is similar to a fruit leather. We adapted the recipe by cutting the sugar in half, resulting in a lighter colored candy.

Start by washing your quince/membrillo and removing all the fuzz. Then peel and remove the core and seeds. Cut fruit into into pieces and place in a large pot with 1 cup of water. Place on stovetop over medium hight and immediately add sugar. (Amount of sugar will depend on amount of quince. The traditional recipe calls for equal parts. So if you have 4 cups of fruit, you would use 4 cups of sugar. However, we decided to use only half the amount of sugar. So start with less, taste and adjust to your liking.) Stir continually while it cooks for approximately an hour. The sugar will dissolve and the liquid will eventually evaporate. At this point, add in the juice of one lemon or one small orange and puree with an immersion blender or electric mixer. Continue cooking/stirring until the hour of cooking is complete and the sugar caramelizes and turns a darker color. However, the less sugar you use, the less the color will change. Remove from stovetop and place in mold that has been lined with parchment paper or sprayed with non-stick cooking spray. Allow to cool, then cover and place in refrigerate to set for a minimum of 24 hours. Once firm, remove from mold, cut in slices and enjoy!
