This bright, tangy & tasty rice is the perfect side dish for any meal, and it's surprisingly easy to make.
Heat a large skillet on stovetop over medium high heat. Drizzle enough oil in it to coat bottom of pan. Add in rice and onion and stir well, just long enough for onion to soften, but do not brown rice. Add in minced garlic and lime zest. Add salt and chicken broth. Mix well, then do not stir again for duration of cooking. Let it come to a boil. Cover with lid and reduce heat to Low. Let cook for 15 minutes. Remove from stove but leave covered. Let stand 15 minutes. Fluff with fork, add in cilantro juice and chopped cilantro. Mix well and serve immediately.
