This truly is the Best Ever Homemade Carrot Cake. It's incredibly moist, loaded with carrots and walnuts, and topped with delicious cream cheese frosting that is super easy to make with just 3 ingredients.
Preheat your oven to 350º.
Grease and flour two round 8” cake pans or three round 6” cake pans.
In medium mixing bowl, combine flour, baking soda, salt, cinnamon, nutmeg, cloves and set aside. In, separate large mixing bowl, combine oil, brown sugar, granulated sugar, eggs and vanilla extract. Use an electric hand mixer to mix until smooth. Then add in grated carrots and sour cream and mix again. Add dry ingredients into bowl with wet ingredients and mix until left with a smooth cake batter. Fold in chopped walnuts or pecans. Pour equal amounts of cake batter into each baking pan and bake for 30 to 40 minutes. Time will depend on size of cake pans you're using and individual ovens. Remove cakes from oven and let cool in pan for 10 minutes before turning them onto cooling racks to cool completely.
Use electric hand mixer to combine softened cream cheese and sweetened condensed milk. Once fully mixed, add in whipped cream and mix until smooth. Frost cakes once they are fully cooled. You may want to set some frosting aside and use food coloring to make orange and green icing that you can use to create decorative carrots. You can also top with additional pecans or walnuts.
