Pork Tinga

Tinga is a shredded meat (in this case, pork), that's cooked tender in a spicy sauce, seasoned with chorizo and chipotle flavors. It can be used in tacos, served over a bed of rice, or it can be enjoyed all on it's own.

    Set cooker to "sear" and add a little oil to coat bottom of pan. Season pork meat with salt and pepper. Place meat in pan and sear on all sides, then remove and set aside. Add chorizo and onions to pan and let cook. Add in minced garlic, thyme, oregano and cumin. Add chipotle peppers, can of diced tomatoes and chicken broth. Stir well. Then return seared pork meat to pan. Place bay leaves on top. Cover with pressure cooker lid (seal vent), and set to pressure cook mode. Cook for 1 hour. Let pressure release naturally for 20 minutes. Remove pork from pan and place in dish. Shred with fork, then pour reserved broth from pan over shredded meat. Enjoy!
